Egg Puffs (Quick Recipe)

Puffs are the best snacks for all of us. Its a great appetizer which can be go well for kitty/birthday parties, pot luck and evening tea parties. Puffs taste just great with any stuffing inside be it hard boiled eggs, veg curry, chicken curry or any other sweet stuff you like. I did veg and egg puffs for my son's birthday party and it was a hit item.
I always recollect my college days where we used to visit bakeries very often to quickly grab hot spicy and yummy puffs! mouth waters even now when I think of them :). Puff sheets making is little complicated and involves lot of patience. But thankfully with ready to use puff sheets our life is made easy. Based on my friends suggestions and other reviews on the net, peppridge farms puff sheets are considered the best. These are available in frozen sections of any american grocery stores like super walmart or stop and shop!
Peppridge farm puff sheets comes in a pack with two long sheets. Each sheet will have three sections. You can use each section to make two or three puffs depending on the desired puff thickness. For egg puffs, I make three out of each side and that comes to 9 out of each sheet and total eighteen puffs can be made with 1 pack.

Ingredients (total = 6 puffs)
Thawed puff sheets - 2 sides of 1 big sheet
Eggs boiled
- 3
Chat masala - 1 Tspoon
Fried onions - 1/2 cup

Procedure

  • First step in making puffs involves deciding on the number. Depending on the required number, thaw the frozen sheets by keeping them out at room temperature for atleast 25 mints.
    Note:
    If you thaw for more time your puffs quality will get effected.
  • While the sheets get thawed, prepare your puff stuff. Boil eggs, separate shells and split them vertically. Now to the cut split eggs, add chat masla, fried onions and green chillies as per your spice levels.
    • Set the conventional oven baking temperature to 450 F and preheat.
    • Now take each thawed side, sprinkle little wheat flour on top, use a rolling pin and roll it a bit vertically to expand its width. The sheet will look like a rectange. Now cut the sheet in to three equal halves.
    • Take each cut sheet and place the egg stuff on it. The flat side of egg must rest on the sheet as shown below.

    • Apply little water on any two diagonal edges and seal them to wrap the inner egg as shown below.
    • Apply little butter or spray on the top surface of the baking tray. Now place the prepared egg puff sheets on the lubricated baking tray.
      Note: For a greater puff colour, you can coat the sheets with egg wash.
    • Place the baking tray in the oven and bake for 12-15 minutes.
    • Hot! yummy, fresh and home made puffs are ready! serve with ketchup and munch yumm yumm yumm! With this recipe, I am signing off for the long weekend. Catch u again with new recipes sooon.
