Aloo Kichdi



Aloo kitchdi is made very often in our home as it is a very healthy and a light meal. It goes well with any curry (veg/non-veg) or even can be had with raitha.

Ingredients:
Aloo/potatoes - 2 big
Green chillies vertically slit - 4
Rice - 1 cup (rice cooker / standard measuring cup)
Moong dal - 1/2 cup
Onions - 2
Mint leaves - crushed - 2 tspoons
Ghee - 3 Tspoons
Ginger garlic paste - 11/2 tspoon
cashwes - for garnishing
Turmeric - 1 Tspoon
Salt - as desired

Procedure:
  • Wash rice under running water, strain and keep it aside.
  • Now peal the potatoes and cut them in to large pieces as small pieces may get mashed while cooking.
  • Chop onions and green chillies vertically and keep them ready. Now take few washed mint leaves and chop them small.
  • Take a deep frying pan and add little oil and let it be heated on a medium flame. Once oil gets heated, add chopped onions, green chillies, mint leaves and moong dal.
  • Once onions turn translucent, add ginger garlic paste and stir for couple of minutes. Now add cut potatoes and let them fry for couple of minutes.
  • Now add rice and fry for couple of minutes. Switch off the stove and transfer all contents in to a rice cooker. Add water in 2 1/4:1 ratio (two and quarter cups of water for 1 cup of rice).
  • Aloo kitchdi should be done in about 15-20 minutes. Pour 2 tspoons of ghee and serve hot.
